Ingredients:

  • 2 pounds (900 grams) pork shoulder, cut into bite-sized pieces
  • 1 cup sour orange juice (or substitute with a mixture of orange and lime juice)
  • 4 cloves garlic, minced.
  • 2 teaspoons dried thyme
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon of salt
  • 1 Scotch bonnet pepper, seeded and finely chopped (depending on your spice preference)
  • 2 tablespoons vegetable oil
  • 1 cup of water
  • Cooking oil, for frying

Preparation:

  • Make the marinade by mixing sour orange juice, minced garlic, dried thyme, ground black pepper, paprika, and salt in a large bowl.
  • Add the bite-sized pieces of pork to the marinade, making sure they are completely coated. Cover the bowl and refrigerate, allowing the pork to marinate for at least 4 hours or overnight for best flavor.
  • In a big pot, warm 2 tablespoons of vegetable oil over medium-high heat.
  • Fry the marinated pork in batches until it becomes crispy and golden brown on all sides. Take out the pork from the pot and keep it aside.
  • Add the chopped Scotch bonnet pepper to the same pot and fry for a minute to release its flavor.
  • Return the fried pork to the pot and add the reserved marinade and 1 cup water. Let the mixture come to a boil, then lower the heat to low. Cover the pot and let the pork simmer for 30-40 minutes until it is tender and cooked through.
  • While the pork is boiling, prepare a deep frying pan with cooking oil for frying. Heat the oil over medium-high heat.
  • Once the pork is tender and fully cooked, remove it from the pot and drain off any excess liquid.
  • Fry the cooked pork in hot oil until it is crisp and slightly caramelized on the edges.
  • Serve the delicious Haitian pork grits hot with pickles (spicy pickled vegetables) and plantains for a truly authentic and flavorful Haitian meal.
