GRILLED SALMON

Ingredients:
- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Juice of 1 lemon
- 2 cloves garlic, minced.
- 1 teaspoon of dried thyme (or use fresh thyme if you have it)
- Lemon wedges, for serving
- Fresh parsley, chopped, for garnish.
Instructions:
- Preheat your grill to medium-high heat.
- Dry the salmon fillets with a paper towel.
- In a small bowl, mix the olive oil, lemon juice, minced garlic, and dried thyme to make a glaze.
- Brush both sides of each fillet with glaze. Season with salt and pepper.
- Lay the salmon fillets on the grill, with the skin side facing down. Close the grill lid and grill for 5-6 minutes on each side.
- During the last few minutes of grilling, baste the fillets with more of the glaze.
- Gently take the grilled salmon off the grill and place it on a serving platter.
- Squeeze fresh lemon juice over fillets and garnish with chopped parsley.
- Serve immediately with your favorite sides.
