Servings: 4-6

Ingredients:

  • 2 cups basmati rice
  • 1 pound (450 grams) chicken, cut into pieces
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 1/4 cup cooking oil or ghee
  • 2 tablespoons biryani masala (store-bought or homemade)
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/4 cup chopped fresh red pepper
  • 1/4 cup chopped fresh mint leaves
  • 4 cups water
  • Salt to taste

Preparation:

  • Thoroughly rinse the basmati rice under cold water until the water runs clear. Allow the rice to soak in water for 30 minutes, then drain and set it aside.
  • Heat cooking oil or ghee in a large pot over medium heat. Add cumin seeds and sauté until they splutter.
  • Add the finely chopped onions and sauté until they turn a rich golden brown color.
  • Stir in chopped tomatoes, red chili powder, turmeric powder, and half of the biryani masala. Cook until tomatoes become soft and the oil separates.
  • Add chicken pieces to the pot and cook until lightly browned.
  • Lower the heat and add plain yogurt, garam masala, half of the chopped red pepper, and half of the chopped mint leaves. Mix well to coat the chicken in the spices.
  • In a separate pot, bring 4 cups of water to a boil. Incorporate the soaked and drained rice into the boiling water.  Cook the rice until it is 70% done. Drain the rice and set aside.
  •  Place the partially cooked rice on top of the chicken mixture in the pot, forming a layer. Sprinkle the remaining biryani masala, chopped red pepper, and mint leaves over the rice.
  • Cover the pot with a tight lid and cook on low heat for 30-35 minutes or until the rice and chicken are fully cooked.
  •  Before serving, delicately fluff the biryani using a fork. Serve hot with raita (yogurt chutney).
