 Guyanese Pepper Pot Stew

Ingredients:

  • 2 pounds (900 grams) of meat stew, cut into chunks
  • 1 cup cassareep (the traditional Guyanese spice made from cassava
  • 2 large onions, chopped.
  • 4 cloves garlic, minced.
  • 3-4 wiry wiry peppers (or substitute with habanero or scotch bonnet peppers for heat), seeded and finely chopped.
  • 3 cinnamon sticks
  • 6 cloves
  • 6 whole pimento seeds (allspice)
  • 4 bay leaves
  • 2 pcs 5 star 
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fine leave thyme
  • Cooked white rice, for serving


Preparation:

  •  In a big pot, warm the vegetable oil over medium-high heat. Add the chopped onion and minced garlic, and fry until the onions are soft and translucent.
  • Add the meat stew meat to the pot and brown it on all sides, making sure it comes out well.
  • Stir in cassavareep chopped pepper, cinnamon sticks, cloves, five star, whole pimento seeds, Thyme and bay leaf.
  • Sprinkle the brown sugar over the mixture and season with salt to taste.
  • Let the mixture come to a boil, then lower the heat to low. Cover the pot and let the pepperpot simmer for about 2 to 2.5 hours, or until the meat is tender and the flavors have mix good.
  • Check the pot from time to time and add a little water if needed to maintain the desired consistency.
  • Taste the dish and add more salt and spice to suit your liking.
  • Serve the Guyanese pepper pot hot with tennis roll ,plaited bread or brioche.The rich and flavorful stew is perfect for warming up on cold days and is sure to delight your taste buds with its unique blend of traditional Guyanese spices.
