BACON-WRAPPED SCALLOPS

Ingredients:
- 16 large sea scallops
- 8 slices of bacon, cut in half.
- 2 tablespoons olive oil
- 2 tablespoons melted butter
- 2 garlic cloves, minced.
- 1 teaspoon lemon juice
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish.
Instructions:
- Get your oven ready by preheating it to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Wrap each scallop with half a slice of bacon and secure it with a toothpick. Place the bacon-wrapped scallops on the prepared baking sheet.
- In a small bowl, combine the melted butter, olive oil, minced garlic, lemon juice, salt, and pepper.
- Brush the butter mixture over the bacon-wrapped scallops, making sure to coat them evenly.
- Bake the scallops in the preheated oven for about 12-15 minutes, or until the bacon is crispy and the scallops are opaque and cooked through.
- Once cooked, carefully remove the toothpick from the scallops.
- Transfer the bacon-wrapped scallops to a serving platter, garnish with chopped parsley, and serve hot.
