How to Cook Surinam Roti Chicken?

Ingredients:

  • 1 pound (450 grams) chicken thighs, boneless and skinless, cut into bite-sized pieces
  • Peel and dice the two large potatoes into bite-sized chunks.
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • 1 tablespoon vegetable oil
  • 2 tablespoons curry powder
  • 1 large onion, finely chopped.
  • 3 cloves garlic, minced.
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper or madamjenet pepper
  • 1 cup of water
  • 2 tablespoons vegetable oil, for cooking
  • Salt and pepper to taste


Preparation:

  • In a spacious mixing bowl, bring together the all-purpose flour, baking powder, and a pinch of salt. Gradually add hot water while kneading until a soft and smooth dough is formed. Cover the dough with a damp cloth and allow it to rest for 15-20 minutes, letting the flavors meld and the texture settle.
  • Over medium heat, warm up 1 tablespoon of vegetable oil in a large skillet. Add finely chopped onion and chopped garlic, and saute till they turn translucent.
  • Add the seasoned mix to the sizzling pan and cook until it  fried good.
  • Add chicken and and stir wel .Add the potato slices and bring the mixture to a boil. Cover the pan and let it cook for about 30-40 minutes, or until the chicken is tender and the potatoes are cooked.
  • While the chicken and potatoes are boiling, divide the remaining dough into 4 equal-sized balls. On a floured surface, roll each ball into a thin, flat circle (roti).
  • Heat 1 tablespoon vegetable oil in a separate pan over medium heat. Cook the roll-out bread one at a time until they are lightly browned and puffy.
  • Serve Surinamese roti chicken by placing a roti on a plate and top with chicken and potato curry. Don’t forget a glas of coca cola and enjoy this delicious Surinamese comfort food!
